Going Back to My Roots
As I reflect on my childhood, I recall how food was more than just sustenance, but also a celebration of life's joys, big and small. My mother's kitchen was filled with safety, love, laughter, and the aroma of her unique culinary creations. Her mastery of spices elevated her one-pot meals to a level of deliciousness that was unmatched.
Our meals truly filled my heart as they were lovingly prepared at home. A stark contrast to the hurriedly made dishes at restaurants. Each dish, a labour of love, cooked slowly and with meticulous care, resulting in
tastes that remain unparalleled.

During those times, there was a culture to treasure one's recipes, crafted with fresh, local ingredients, and a cooking style that demanded dedication in preparation. This is not limited to Indian cuisine but extended to all types of food. The attempt to replicate these recipes may yield a similar dish, but the taste, and the experience, are unlikely to be identical. It's a result of years of honing the craft, and once you've savoured it, it becomes a part of your memory. These recipes are not about taking shortcuts; they are about the art of creating something unforgettable and delicious.

Even now, I hold steadfast to the belief that every pot of food should be crafted from scratch, with patience and respect for the ingredients we are fortunate enough to have. But above all, it's about infusing each dish with a generous serving of love and passion, a testament to the people it is prepared for.
